HOW TO MAKE A HEALTHY CHICKEN SALAD (WITHOUT MAYO THAT’S STILL SO GOOD)
INGREDIENTS:
Chicken - any type of cooked chicken works. If you are in a bind for time, rotisserie is the way to go!
Celery - my go to add in for giving it a crunch!
Grapes - I’ll also switch this out for apple sometimes, but red or green grapes tend to be my go to. Not only do these add color to the salad but the burst of sweetness with the salty that the salad is, is perfect!
Greek yogurt - this is a great protein packed substitute for mayo that when mixed with the other ingredients, has a surprisingly delicious taste. I tend to use Siggi’s 0% fat, but feel free to use whichever plain Greek yogurt you like, full fat or 0%, it’s up to you
Dijon mustard
Lemon juice - this brings a bright and fresh flavor to the chicken salad
Celery seed - a new find of mine and a MUST add a it really steps up the flavors in the salad
Chopped walnuts - nutrient powerhouses and great for the brain, what a better way to add texture than chopped walnuts! If you don’t love walnuts, any type of nut will work.
AMOUNT OF INGREDIENTS:
4 cups cooked chicken, chopped or shredded
3 stalks celery, diced
1 cup red grapes, sliced in half
1/2 cup chopped walnuts
3/4 cup plain Greek yogurt
1 TBSP Dijon mustard
3 TBSP fresh lemon juice
1/2 tsp celery seed
1 tsp sea slat
1/2 tsp black pepper
INSTRUCTIONS:
In a large bowl, mix together chopped/cubed or shredded chicken, celery, grapes and walnuts.
In a separate bowl, whisk together Greek yogurt, dijon, lemon juice, celery seed, salt and pepper.
Mix the two bowls of ingredients together and it’s done!
HOW TO SERVE?
Eat on a sandwich or my personal favorite, open face style layered with some sprouts and cucumber
Add it to a wrap like Angelic Bakehouse or Siete brand
Put on to endive or romaine leaves for a lettuce wrap
Use as a dip with crackers. Personally I love Simple Mills or Wasa for a nice crunch
