3 DELICIOUS WAYS TO MAKE POPSICLES WITHOUT THE GUILT
Well, if you didn’t, you will now (and you can thank me later).
These popsicles are not only a fun way to beat the summer heat but they’re also a healthier alternative to store-bought ones, plus, the addition of nutrient dense and protein rich ingredients!
In case you’re in need of some molds, here are my two favorites:
Stainless steal popsicle molds
Blueberry Protein Popsicles
Ingredients:
Greek yogurt, vanilla flavor (I love Siggi’s brand)
Vanilla protein powder (I love the quality brand Ora Organics)
Local raw honey
Organic blueberries
Instructions:
In a bowl, combine together the yogurt, protein powder, and honey.
Then, in a blender or food processor, puree the blueberries.
Mix the pureed blueberries with the yogurt, protein powder and honey combinataion.
Pour the mixture into popsicle molds and freeze!
Note:
Have fun with these and change up the flavors! It’s a simple shift as all you need to do is change up the fruit. Try out peaches, strawberries, cherries, or raspberries!
Coconut Fudge Popsicles
Ingredients:
1 can full-fat organic coconut milk
1 can organic coconut cream
2 tablespoons unsweetened organic cocoa or cacao powder
1 tsp vanilla extract
2 Tablespoons grass fed beef gelatin
2 Tablespoons of raw local honey or maple syrup
Instructions:
In a blender, combine all ingredients.
Then, in a small saucepan add the combined ingredients and gently heat until warm but not boiling - the point is to dissolve the gelatin.
Turn off the heat and simply let the mixture sit for about 10 min checking to make sure the gelatin has fully dissolved.
Give it a good mix then pour the mixture into popsicle molds.
Place in the freezer and let set until frozen!
Tart Cherry Popsicles
These are a great treat to have prior to bedtime due to the melatonin naturally found in tart cherry juice.
Ingredients:
2 cups organic tart cherry juice
1 tablespoon grass fed beef gelatin
1 scoop magnesium powder or better yet, electrolytes like Re-Lyte or Ultima
Instructions:
In a small saucepan, heat the tart cherry juice over low heat.
Sprinkle the gelatin into the warm juice and whisk to dissolve.
Remove the mixture from heat and allow it to cool slightly making sure all gelatin is dissolved.
Add the magnesium/electrolyte powder.
Pour the mixture into popsicle molds, put in freezer and let set until frozen!
